Cauliflower Mashed Potatoes


I found this recipe on a few years and have been addicted ever since. I make this dish at least once a week every week. This recipe is not only gluten-free, but its’ also dairy and soy free. I made this dish on Thanksgiving for my entire family and it was a hit. When I heard my niece ask for seconds of the “mashed potatoes” I was so happy! I would say that this tastes just like mashed potatoes but it doesn’t, its way better!


  • 2 heads cauliflower, washed and cut into large pieces
  • 2 tablespoons Earth Balance Buttery Spread (Soy-Free)
  • 1/2 teaspoon kosher salt

Directions: Steam the cauliflower until it is very tender. I purchased a microwave steamer at bed bath and beyond for $9 dollars. I put a head of cauliflower in a time and microwave it for about 6-7 minutes depending on the size of the cauliflower. Puree cauliflower in a food processor, add in buttery spread and salt. Reheat in casserole dish in the oven at 350 degrees for 20 minutes.

Little Debbie’s Tip: If you are not allergic to dairy or soy you can use regular butter if you choose but I don’t recommend it. I use Earth Balance butter for everything and it is so good, it’s also a lot healthier than regular butter or margarine.
